We took our beloved Creamy Thai Curry and turned it into a lower-carb, higher-protein powerhouse. Organic tofu is marinated then baked to perfection.   We then and toss with vibrant broccoli, sugar snap peas, and carrots and smother with a Satay-inspired peanut curry sauce.

How To Prepare

Microwave

Partially vent film. Microwave on high for 3–5 minutes, or until internal temperature reaches 165°F.

Check halfway through cooking time and stir. After heating, stir released water back into the sauce. Let rest 1 minute to allow sauce to thicken slightly.

Microwave times may vary depending on wattage. Adjust time as needed.

Oven

Keep frozen until ready to heat. Preheat oven to 350°F. Partially vent tray and place on baking sheet on center rack of oven. Tray is oven safe, do not exceed 400°F. Heat 20- 30 mins. to an internal temperature of 165°F. Check halfway through cooking time and stir. After heating, stir released water back into the sauce. Let rest 1 minute to allow sauce to thicken slightly.Oven times can vary, adjust time accordingly.

Stovetop

Cook from frozen. Place contents in nonstick pan. Add a tablespoon or two of water to prevent sticking. Cover. Place over low heat. Once meal begins to warm and is no longer frozen, remove lid. Continue heating until desired temperature is reached, or at least 165°F, stirring frequently. Add water, a tablespoon at a time, if sauce gets too thick.
